All Day Trader

All Day Trader is Albany's' latest all-day eatery, located in the Westfield shopping complex. It's a relaxed yet vibrant space, their food is fresh with locally sourced ingredients and clever, yet tested flavours. They pride themselves on their strong community connection and have a goal of a zero-waste kitchen. 

Southern Hospitality was lucky enough to be a part of the renovations the second time around after designing the kitchen 11 years ago when the complex first opened. We supplied all new preparation and cooking equipment, dishwashers, crockery, cutlery, glassware and kitchen hardware. All-Day Trader's first trading day was on Monday 3rd of December 2018.

 Cooking Equipment

We fitted the kitchen with a range of Blue seal cooking equipment. In particular, we supplied two Blue Seal G506D & G56D 6 burner gas ranges, two Blue Seal GT46 vee-ray fryers, a Blue Seal G91 Gas Salamander, Blue Seal Gas Chargrill with a drop-on griddle plate and a Turbofan Combi Oven EC40M5.

In terms of food preparation, we supplied All-Day Trader with a Robot Coupe R211XLU Combi Cutter, Robot Coupe MP350 Powermixer, a Suprema Vacuum Packer 310 (Pictured Below) and a Grant Sous Vide Vortice Universal Stirred Heater.

We supplied a Delta Undercounter Stainless Steel 3 Door Chiller, Delta Chest Freezer and a Scotsman Ice Machine MV306AS fitted with an SB193 storage bin.

A Starline M2 passthrough dishwasher and UD under counter dishwasher were supplied and fitted for All-Day Traders
