Production Kitchen
Brief:
Full kitchen fit out within an existing multi story building
Challenges:
- The kitchen design had to be planned around existing services, which had already been placed on site.
- Careful planning required ensuring timing of fit out ran to schedule. For example Cool Rooms needed to be installed before the flooring went down and the extraction system was installed before the ceiling went in.
Interesting Features:
Britannia Canopy
Designed to not only extract but also deliver air back into the environment through personal supply nozzles.
Features a Services Spine Wall – Services (plumbing, electrical and gas) articulated within the stainless wall running behind the equipment which can be easily serviced through a removable panel.
Customised Stainless Steel Bain Maries
Especially designed for production cooking – features a plate up line on either side and plate storage capacity below.
Cool/ Freezer Rooms
Insulated floor – continual levelled floor is insulated to protect the floor belows ceiling.
Equipment:
- Convotherm combi steamers
- Waldorf convection baking oven, fryers, chargrills, griddle plates and cook tops
- Steam jacket kettle – for soups and sauces
- Friginox blast chiller
- Eurochill freezers
